MEATS
All of our animals are organically raised and grass fed.
The lambs are born in the spring, and stay with their mothers to self-wean over the summer. In late autumn, we move our lambs to the meadows nearer the ocean for a month or so before they are taken off to the processing facility. Our fields are misted daily by the salt spray, which gives the lamb a unique flavor reminiscent of the lamb of Bretagne, France.
We sell our meat in the shop, and can supply local restaurants and caterers. At this time we are only able to offer our meats frozen. Please remember to allow sufficient time to defrost. Our lamb is butchered, hung, wrapped and flash frozen at a USDA certified facility on the mainland. We have chosen not to pursue USDA organic recognition, but rather welcome people to stop at the farm and observe, or inquire about how we raise our animals. We believe this is the strongest regulatory process of all. Our fields are never tilled, we have never used synthetic fertilizers or pesticides, and our animals only consume organic grains. Beyond organic practices, we incorporate biodynamic agricultural methods, permaculture, silvopasture, as well as a consistent mob grazing technique for our grazers.
LAMB
We sell racks of lamb, loin chops, legs –(bone in and out), boned-rolled shoulders, ground lamb, shanks, stew, riblets, and when available savory sausage. Our sausages are particularly popular; if you drive by the farm and see the sausage sign out, do not tarry. We also have organ meats and mutton available.
BEEF
Our friends at Mermaid Farm have offered us bulls to graze on our land, and as a result we are able to sell organic, grass-fed ground beef in addition to our lamb. We are grateful to the cows for their incredible contributions to the land, their gentle grazing, their strength, and their beauty.
EGGS
Our laying hens are fed organic grain from NY state, and free range in the meadow all day. We have been hatching our own laying chicks for several years, from breeds including Australorp, Barred Rock, Americauna, Buff Orpinton and Rhode Island Red. We also sell organic duck eggs by the half-dozen, laid by our Cayuga, Khaki Campbell and Welsh Harlequin ducks.
